Strawberry Pancakes

These vegan strawberry pancakes are absolutely magnificent! They are fluffy and sweet on the inside, and golden yet a tad crispy on the outside! They only require 6 simple, natural ingredients and just 20 minutes of your day! Enjoy with extra strawberries and a fountain of maple syrup for the perfect, nourishing plant-based breakfast the whole family will love!

 

YIELD: 4 servings

TIME: 20 mins.


Ingredients:

- 2 tbsp stevia (or other granulated sweetener of choice)

- 2 tsp baking powder

- 1 cup almond milk (or other milk of choice)

- 1 tsp vanilla extract

- 1 cup gluten free flour (or other flour of choice)

- 1/2 cup diced strawberries

 

Instructions:

  1. In a small bowl, mix together the sugar, baking powder, almond milk, and vanilla. Next whisk in the flour until the batter is smooth.

  2. Heat a pancake griddle or a sprayed non-stick pan on medium heat. Spoon roughly 4 tbsp of batter per pancake and drop your diced strawberries on each pancake. Proceed to cooking until golden brown on each side.

  3. Once all the pancakes have been cooked, form a huge stack and top with extra strawberries and a pool of maple syrup.

  4. Enjoy!!
