These vegan strawberry pancakes are absolutely magnificent! They are fluffy and sweet on the inside, and golden yet a tad crispy on the outside! They only require 6 simple, natural ingredients and just 20 minutes of your day! Ingredients:
- 2 tbsp stevia (or other granulated sweetener of choice)
- 2 tsp baking powder
- 1 cup almond milk (or other milk of choice)
- 1 tsp vanilla extract
- 1 cup gluten free flour (or other flour of choice)
- 1/2 cup diced strawberries
Instructions:
In a small bowl, mix together the sugar, baking powder, almond milk, and vanilla. Next whisk in the flour until the batter is smooth.
Heat a pancake griddle or a sprayed non-stick pan on medium heat. Spoon roughly 4 tbsp of batter per pancake and drop your diced strawberries on each pancake. Proceed to cooking until golden brown on each side.
Once all the pancakes have been cooked, form a huge stack and top with extra strawberries and a pool of maple syrup.
