Protein Packed Vanilla Cupcake Granola

Usually when people hear the word "protein," their minds usually go to "Eww a chalky aftertaste, gross you're gonna be able to taste it, I don't want to bulk," hold the assumptions people because boy do I have a tasty new pantry-staple for you! This protein packed vanilla cupcake granola truly does live up to it's name! It's sweet, crispy, clustery, and has the best "birthday cake" flavor to it! This granola can be whipped up in under 30 minutes, and only demands for the healthiest, most tastiest, and nutrient packed ingredients! So what are you waiting for? Let's get baking!

 

YIELD: 12 servings

TIME: 30 mins.


Ingredients:

- 1.25 cups rolled oats

- 1/2 cup vanilla protein powder

- 1/4 cup pistachios (chopped)

- 1/4 cup macadamia nuts (chopped)

- 1/2 tsp cinnamon

- 1/2 tsp vanilla extract

- 2.5 tbsp honey

- 2 egg whites

- 1/4 cup avocado oil

 

Instructions:

  1. Preheat your oven to 325F/165C and line a large baking tray with parchment paper.

  2. Add all ingredients to a large bowl, and stir until well-combined.

  3. Transfer your granola mixture onto your prepared baking sheet, and bake for about 20 minutes, or until golden brown, stirring every 5 minutes or so to prevent it from burning.

  4. Let it cool completely before breaking into clusters and storing in an air-tight container in the pantry.

  5. Enjoy!!
