Carrot Cake Banana Bread

I'm going to be completely honest with y'all for a sec....after I took that picture, my family and I ate that entire loaf! That's how good it is! Tastes just like a warm flavorful carrot cake! It's moist, healthy, fluffy, and the cream cheese glaze on top makes for the best nourishing dessert! You have to make it and thank me later!


YIELD: 6 servings

TIME: 45 mins.

Bread Ingredients:

- 2 cups oat flour

- 1 tsp baking soda

- 1 tsp cinnamon

- 3/4 tsp baking powder

- 3/4 tsp sea salt

- 1/8 tsp nutmeg

- 1.5 bananas (mashed)

- 1/2 cup shredded carrots

- 1/2 cup maple syrup

- 1/2 cup almond milk

- 2 tsp vanilla extract

- 1/2 cup walnuts (crushed)

Glaze Ingredients:

- 1 cup powdered sugar

- 4 oz. cream cheese (softened)

- 3 tbsp vegan butter (softened)

- 1 tsp vanilla extract

- 2 tbsp almond milk



  1. Preheat your oven to 350 degrees F and spray a bread pan with cooking spray

  2. Combine all your dry ingredients in a bowl plus the walnuts

  3. In a separate bowl whisk together all the wet ingredients, bananas and carrots included.

  4. Pour the wet mixture in with the dry ingredients and stir until combined well. Pour batter into prepared bread pan and bake for 35 minutes.

  5. Meanwhile make the glaze by using a hand mixer to combine all ingredients in a small bowl.

  6. Once the bread is done baking give it time to cool (for the most part) before pouring your glaze over top of it and garnishing with optional crushed walnuts and shredded carrots.
