Gluten Free Lemon Cloud Cookies

Remember the iconic Girl Scout Cookies, the discontinued Savana Smiles? Well the Girl Scouts should start selling these cakey, fluffy, tangy, sweet, HEAVENLY cookies! The subtle lemon flavor, masked by the generous dusting of organic powder sugar is just a reminiscent sample from my childhood! Plus a new twist...today we'll only be making 3 cookies since they're MASSIVE!! Funny story, I wasn't sure what to call these delicious cookies, but as soon as I began talking about them, people immediately fell in love. So I had to quickly improvise a name..."Lemonade Levains? Healthified Savana Smiles? Lemon Pillow Cookies?" "Cloud Cookies," said my mom, so introducing the gluten free lemon cloud cookies you NEED in your life!

TIME: 20 mins.


Ingredients:

- 1.5 cups almond flour

- 1 tsp baking powder

- A pinch of salt

- 3 tbsp vegan butter (melted and cooled)

- 3 tbsp maple syrup

- 2.5 tbsp lemon zest

- 2 tbsp lemon juice

- 1/2 tsp vanilla extract

 

Instructions:

  1. Preheat your oven to 350F/180C.

  2. Whisk together the almond flour, salt and baking powder in a medium sized bowl.

  3. Then add in the butter, maple syrup, lemon juice, vanilla extract, and lemon zest to the dry ingredients. Mix until you form a wet dough.

  4. Shape the dough into three balls, then use your hands to form slight, crescent moon shapes.

  5. Place the cookies on a parchment lined baking tray, and bake for 12 minutes, or until the cookies turn a light golden brown. Be careful as they burn relatively easy!!

  6. Dust with a generous amount of organic powder sugar.

  7. Enjoy!!
