French Toast Cinnamon Rolls

Tell me this wasn't the best idea ever: combining a warm, gooey, stick cinnamon roll, with the sweet, hearty french toast! Oh but obviously it would be extremely healthy and drenched in a mouth watering cream cheese glaze, because cream cheese frosting is immaculate! No but seriously my whole family tried these and everyone gave them a 10/10, and I KNOW you will too! What's to hate? You combine the two best breakfasts of all time together, make it wicked healthy, and BAM!! You've got the most delicious breakfast or evening treat!

TIME: 45 mins.


French Toast Cinnamon Roll Ingredients:

- 4 eggs

- 1 cup almond milk

- 1 tbsp vanilla extract

- 1 tsp cinnamon

- 1/4 tsp sea salt

- 1/4 cup organic brown sugar

- 8 slices of sourdough bread (cut into strips)

Cream Cheese Glaze Ingredients:

- 1/2 cup organic powdered sugar

- 2 oz. vegan cream cheese (softened)

- 1.5 tbsp vegan butter (softened)

- 1/2 tsp vanilla extract

- 1 tbsp almond milk

 

Instructions:

  1. Preheat your oven to 350 degrees F.

  2. Spray a standard muffin tin with cooking spray.

  3. In a medium sized bowl, whisk together your eggs, vanilla, salt, cinnamon, milk, and brown sugar. Dunk each strip of sourdough bread into the wet egg mixture for a few seconds, then proceed to coiling them gently into each muffin tin. (You'll need a good amount per muffin cup! A labor of love that is DEFINITELY worth it ;)

  4. Sprinkle some additional cinnamon and brown sugar over the tops of each muffin, and bake for roughly 20-25 mins. Wait for the tops to become golden, and a toothpick to come out clean.

  5. Let them cool for at least 10 minutes in the actual muffin tin before attempting to remove. Meanwhile, make the cream cheese icing by adding all the ingredients to a small bowl, and beating on low speed, using an electric hand mixer, until a smooth glaze remains. Pour the glaze evenly on the tops of each muffin, after they have been removed from the muffin tin and transferred to a wire cooling rack.
