Don't lie, we ALL have those days when we wake up and our mind and tummies think *COOKIES!!* While they're super delicious, they aren't the most nutritious treat to enjoy right in the-- HOLD YOUR HORSES!! Everything I just said is a lie, because these Chocolate Cranberry Walnut Breakfast Cookies are the absolute best thing you could eat for breakfast!! Plus they only require 5 simple pantry ingredients and make a ton of cookies so that way you can #batchmake them! The cookie cravings are cured!!
YIELD: 9 servings
TIME: 50 mins.
Ingredients:
- 1.75 cups oat flour
- 1 banana (mashed)
- 1/3 cup almond butter
- 1 egg
- 1/3 cup maple syrup
Instructions:
Start by preheating your oven to 350F/180C, and line a large baking pan with parchment paper.
Combine all your ingredients in a medium sized bowl.
Next, stir through your dried cranberries, dark chocolate chips, and chopped walnuts. (Measure with your heart not a cup)
Place your cookie dough in the fridge for 30 minutes to give them a good texture.
And finally, scoop out the cookies into 9 even sized spheres, then mold them gently into cookie shapes. Bake the cookies in your preheated oven for 15 minutes, or until the edges are golden brown.
